Easy Miso Ramen Recipe

I love a good bowl of ramen.

Especially when it’s a bit cold outside. It warms from the inside out. Is so filling and still so very healthy.

Totally gluten free. And really very easy to make. 

 

 

Ingredients:

 

2 tsp sesame oil

½ large white onion chopped finely

clove garlic minced

½ thumb ginger grated/chopped finely

Tbsp Tamari Sauce (gluten free soy sauce)

750ml Chicken or Veg stock

2 tbsp Miso paste

 

100g soba (buckwheat) noodles (can substitute rice noodles)

Leafy green veg – can be kale/spinach/greens

Bunch of Spring Onions

Mix of any of the following: radishes (sliced fine), pea shoots, bean sprouts

Handful of mushrooms 

Firm tofu

Chilli flakes

 

 

Method:

 

Heat oil in pan. When shimmering, reduce heat and add onion, garlic and ginger until they begin to soften. Add the tamari. Cook for another minute. Add the stock. Bring to boil.

Add green veg, mushrooms, tofu and noodles. Cook until noodles are nearly ready (check instructions for type of noodles you have chosen). Remove some of the liquid into a cup or bowl and blend in the miso. When blended stir the miso mix back into the broth.

Throw on the scallions, chilli flakes and radishes, pea shoots or bean sprouts as desired.
